Carrot cake with cream cheese frosting has got to be one of my all time favorite cakes.  My niece requested it for her birthday this year, so I was off to the kitchen to experiment.  It’s always a little scarier to create a new recipe when I’m making a birthday cake, especially when the birthday girl is not gluten-free.  You can’t mess around with birthdays. I also needed to bring a dessert to my in-laws for Easter dessert (you can’t mess around with that either) so the pressure was on.  Out of the 30 or so people who I would be feeding between the two events (on the same day I might add) only two were on strict gluten-free diets.  You see the need to perform?  I am feeding flour munchers, myself included, these gluten-free creations all of the time.  Gluten-free folks are pretty easy to impress, given the vast amount of crap, passed off a baked goods, they have been subjected to.  But serving gluten-free cake to the “non-gluten-free crowd” is a much more daunting task.

The cakes turned out beautifully.  Both the cupcakes and the bundt cake were perfectly moist, but still light and fluffy.  Again, I have found a combination that I prefer over my “old” recipe. The birthday girl went back for seconds, to me that’s success. Fat and Fluffy Gluten-Free Pancakes

My son likes loves pancakes.  He asks for them every morning without fail.  After many, many attempts I have developed, what my litte family thinks, are the perfect pancakes.  They are lightly sweet, with just and hint of vanilla.  They are perfectly puffy, tender and light.  They have such a delicious flavour that I prefer them plain with just a bit of butter, my son goes for the classic butter and maple syrup. Strawberry Lime Ice Cream

I love the sweet-tart flavour of strawberry and lime together, they combine perfectly in this creamy, yet fresh and zippy ice cream.  I kept this recipe really simple to let the pure flavours come through.  This ice cream is really easy and quick to prepare, my three year old son did everything, with the exception of turning on the blender. I have to wait  until he is on the couch, well hidden under a blanket, to turn the blender on in this house.  If your kids like to help in the kitchen this recipe is great, there is really no way to mess it up (not that they ever mess anything up 🙂 Continue reading

Christmas day at the farm, my grandparents, is a busy, family filled event.  It really is one of my favorite days of the year.  My grandma does turkey, potatoes, stuffing and gravy, the rest is a hodgepodge of potluck that the rest of us bring.  In addition to the dinner, my grandma makes pies, squares and cookies…lots and lots.. The dessert table is overflowing with delicious goodies.

This is was my little girl’s first Christmas living gluten-free and I didn’t want her to feel left out, so I needed to make several goodies for her to indulge in too.  When I asked what she would like, she didn’t hesitate a second before she said cheesecake. That’s my girl!  I had to negotiate the flavour with her a bit, she wanted plain, I convinced her to just trust me to come up with something great.  ‘Tis not the season for “plain” after all.  Plus Mommy needs some creative freedom in the kitchen. Ginger cookies just scream Christmas to me.  The smell of them baking is enough to put me in the holiday spirit.  The day I baked these cookies was the perfect baking day.  I was in the kitchen, still in my pj’s, happily baking, while the kids were cuddled up on the couch, still in pj’s too, watching a movie.  The tree was lit, the cat was sprawled across their laps, they were eating Christmas oranges happy as can be.  Yes, it was a good day.  And yes, it’s good to be a mom.
